A champion is someone with influence who has a personal stake in the change and will sell for you when you are not in the room. Test for all three. Give them something they need (a business case, internal talking points, proof for their boss) and then check whether they actually use it. Someone who takes your calls but never moves anything internally is a coach, not a champion.

Mistaking a friendly contact for a champion is the single most common reason enterprise deals stall, and interviewers have watched reps do it repeatedly. They want a definition with teeth and a test you actually run. Strong answers include what the champion gets out of it personally, since a champion who is not advancing their own agenda will go quiet the moment things get political.

Example answer
I look for three things: do they have influence, do they personally win if this happens, and will they do work for me when I am not there. The third one is the only one you can test, so I test it early with something small. I will ask them to get me fifteen minutes with their finance partner, or to send a one-pager I wrote up the chain and tell me what came back. If it happens, I have a champion. If it keeps not happening, I have a nice person who likes talking to vendors, and I need to find someone else. What they get out of it matters more than people admit. In one deal my main contact was an operations manager who had been asking for headcount for two years and kept getting turned down. Our business case gave her a way to hit the same outcome without the headcount fight, and she took it into her VP's staff meeting without me asking. That deal closed in six weeks. I always write the internal talking points for them, because they are pitching to people I will never meet.
